This is my Father, Reg Rudge, who emigrated to Australia in 1960 and eventually became the head chef of the Hotel South Australia, the leading 'Establishment' hotel of its day. The young man in the photo is me, Dennis Rudge. I bacame an apprentice chef and worked under my father in the early '70s.
When Reg Rudge came to Sourh Australia in 1960 there were hardly any licensed restaurants and even fewer qualified chefs. Reg Rudge also made a significant contribution to the creation of formal cookery apprentice training in South Australia.
